New publication Fish Flesh Encyclopedia

The Ministry of Agriculture has published the Fish flesh encyclopedia, prepared by the FROV JU staff.
The aim of the work is to improve the traceability of fish products, especially in relation to the identification of the fish species according to the available flesh, especially for the needs of supervisory authorities, but also for the needs of transporters, traders and the general public and thus reduce the likelihood of mistakes and falsification.
In the framework of the work, a register of 179 species of fish and chondrichthyan from 63 families was established. Each species is documented and described as a whole individual and fresh and deep-frozen flesh, which is assessed in whole fillet form, including descriptive characteristics and possibilities of confusion. The publication is available in Czech and English versions. The English version comprises a total of 585 A4 pages, including 311 pages of text and 548 photographs. The preparation took more than 4 years and the scope of the publication is quite unique even on a global level.
